Catfish Margurey

Ingredients

4 medium catfish fillets 4 Tbsp. olive oil Salt, pepper to taste 1 lemon, sliced into rings Sauce: 1/2 cup shrimp, chopped 1/2 cup mushrooms, chopped 3 to 4 Tbsp. olive oil 3 Tbsp. all-purpose flour 3 Tbsp. butter or margarine, melted 1 cup milk 2 egg yolks, beaten 2 Tbsp. lemon juice Salt, pepper to taste 1/2 tsp. parsley flakes

Instructions

Preheat oven to 350 degrees. Coat fillets with olive oil; sprinkle with salt and pepper. Arrange in a shallow baking dish. Top with lemon rings and drizzle with any remaining oil. Bake for 25 minutes. Baste with drippings to maintain moistness. Sauce: Saute shrimp and mushrooms in olive oil until done. Drain and set aside. Stir flour into melted butter. Cook for 1 minute.
