Cheesy Catfish

Ingredients

1/2 to 1 cup Parmesan cheese 1/4 cup flour 1 tsp. paprika 1/2 tsp. salt 1/2 tsp. pepper 6 pan-dressed farm-raised catfish or 2 lb. small filets 1 egg, slightly beaten 1 Tbsp. milk 1/4 cup margarine

Instructions

Preheat oven to 350 degrees. Combine cheese, flour and seasonings. Dip catfish into combined egg and milk; dredge in cheese mixture. Place into baking dish. Pour margarine over catfish. Bake at 350 degrees until golden brown. Serves 4.
