Spinach Cornbread

Ingredients

1/2 cup margarine or butter
1 pkg. frozen, chopped spinach
4 eggs
1 large onion, chopped
3 oz. cottage cheese
1 pkg. Mexican-style cornbread mix

Instructions

Melt margarine. Squeeze spinach dry. Beat eggs well. Mix all ingredients and pour into a 9-by-9-inch pan or muffin tins. Bake at 400 F for 20 minutes or until lightly browned.
